"Ham" you planning your Christmas Lunch?





Ting, ting, ting... Can you hear the bells jingle yet?


Well, Christmas is approaching fast and people this year are getting organised better than before. I see them every day shopping more and more, presents, food and so on.


In this period of time also food comes to mind, isn't it?

And in most Anglosaxxons influenced countries, there are two typical foods presented for Christmas: one the Ham or one classic Turkey.





Which one is your favourite?


My favourite is the Ham, even though my Italian tradition is based on different foods mostly served for Christmas' eve and seafood-based.


Today I would like to share with you my go-to favourite Ham recipe, which h comes directly from my hometown, Trieste in Italy.

It's a buffet traditional food that we enjoy a lot from the young school-age to the more elderly pensioners around town. During winter you see them steaming out of the crust, during summer they do not lose their appeal.


The smell is incredible, you can smell it from hundreds of meters away, and when you get into the shop your mouth starts salivating.


This is the recipe that I use for my bread crust. It is not a special recipe, you can use any classic bread recipe that you use already. But don't hold back you can be as creative as you like, you could also use brioche dough.





Ingredients:

1 kg strong flour

650 gr water

20 gr salt

200 gr Sourdough starter or 5 gr of dry yeast.


Preparation:

mix flour and water directly with the starter and the salt with no hesitation. Let it rest for 30 minutes and then knock the dough down, by folding and stretching a few times.
